- 1 onion (medium, chopped)
- 2 stalks celery (chopped)
- 1/2 head fennel (thinly sliced)
- 2 cloves garlic (finely chopped)
- 1 shallot (large, finely chopped)
- 1 tsp. crushed red pepper flakes
- 2 Tbsp. tomato paste
- 798 mL tomatoes with juice (can of)
- 5 cups fish stock (OR 2 cups clam juice and 3 cups chicken stock)
- 1 cup dry white wine (optional)
- 1 bay leaf
- 6 cups seafood (or more, your choice, such as:)
- white fish fillets (uncooked, chopped into 1½ inch pieces, I used Ling cod)
- smoked salmon (chopped into 1½ inch pieces, I used smoked wild sockeye salmon)
- uncooked large shrimp (or prawns, shelled)
- crab meat
- clams (fresh, scrubbed)
- mussels (fresh, scrubbed and debearded)
- scallops
