- 4 eggs
- 1/3 cup fresh parsley (chopped)
- 1/2 cup fresh basil (chopped)
- 1/2 cup freshly grated Parmesan
- salt
- freshly ground black pepper
- 1 pinch crushed red pepper flakes
- 6 Tbsp. butter (cubed or melted, I use salted butter)
- 1 1/2 cups frozen peas (or fresh, thawed)
- 12 slices prosciutto (fresh, roughly torn)
- 8 oz. burrata cheese (torn)
- 1 bunch watercress (fresh)
- 4 eggs (poaches, optional)
- olive oil (for drizzling)
