- 12 oz. sea salt
- 1 3/4 cups white sugar
- 1/4 cup molasses
- 2 cloves garlic (crushed)
- 2 Tbsp. peppercorns (cracked)
- 1 gal. water

Directions
- Mix all ingredients together and let fish brine over night or even longer
- Discard brine and wash fish for 35 minutes under running water to de-salt
- pad dry and let sit for 3 hours before you start smoking
