An enjoyable variation on mashed sweet potatoes. The recipe, however, has one error: the directions never mention maple syrup. So are we supposed to add maple syrup in with the miso & stock? I decided to leave out the maple syrup. After all, 1 cup is A LOT. I am making this as part of a meal, not a dessert! Also, I used only 2 tablespoons of miso paste and felt the end result was perfect. (I didn’t have white miso so used a different type; I think it’s red.) No salt necessary. I added some black pepper. A great side dish!
