Super authentic. I made the mild version to go with Korean pork chops and what a great weekday meal! I double the amount of spinach, I use two full bags and one recipe worth of sauce. The key to making sure that this flavorful is you really need to squeeze the water out of the spinach. One bag turn into a tight fistful. This is my go to Korean side (banchan).

We made the mild version first. Even after sitting overnight, it didn't taste as flavourful as we liked. Maybe we'll add more soy sauce next time? We'll try the spicy version, too, just haven't had a chance to yet.

The recipe was good, but not as deep and flavorful as I had hoped. Wait the recommended 10 minutes before tasting. I often find that these recipes are more flavorful the day after than the day of. Thank you for the recipe!
