- 1 dried yeast (sachet fast-action)
- 300 mL lukewarm water
- 1 large egg (beaten)

- 150 grams caciocavallo (or scamorza cheese, smoked mozzarella, chopped or sliced)
- 50 grams anchovies (tinned, with their oil)
- 80 grams prosciutto (speck or other cured italian ham, pulled into pieces)
- 2 white onions (or red, sliced finely into rings, blanched in boiling water and drained)
- 8 sun-dried tomatoes in oil (chopped)
- 16 black olives (or green, pitted)
- 1 1/2 tsp. red chilli (crumbled dried)
- 1 Tbsp. extra virgin olive oil
- 1 tsp. sea salt
- 2 tsp. black peppercorns (cracked)
- 1 tsp. dried oregano (or 2 teaspoons fresh, chopped oregano)
