- 1 star anise
- 1 stick canela
- 6 slices ginger
- 3/4 cup brown sugar
- 1/2 green papaya
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 1/2 Tbsp. salt
- 2 Tbsp. tamari
- 2 Tbsp. brown sugar
- 1/2 cup tahini
- 2 Tbsp. black vinegar
- 1/4 cup extra virgin olive oil
- 2 Tbsp. water
- 1/2 Tbsp. Sichuan peppercorn
- 1 tsp. cayenne
- 1 tsp. ginger
- 1 tsp. garlic
- 8 sheets Hodo Soy Yuba (sliced 3/8 inch strips)
- 1/2 cup green onions (green parts only, chopped finely)

Directions
- Simmer until reduced by ½, about 30 minutes
- Shred green papaya and marinate in vinegar, sugar, salt overnight. Drain.
- Whisk dressing ingredients together
- Toss all ingredients together.
