- 2 tsp. Shaoxing wine (or dry sherry)

- 8 whole red peppers (hot Chinese dried, or arbol chilies, stems removed)
- 2 tsp. Sichuan peppercorns
- 1/4 cup vegetable oil
- 1 Tbsp. roasted sesame oil
- 3 Tbsp. chinkiang vinegar (or a mixture of 2 tablespoons rice vinegar and 1 tablespoon balsamic vinegar)
- 2 Tbsp. soy sauce
- 1 Tbsp. sugar
- 1 Tbsp. minced fresh garlic (about 3 medium cloves)
- 1 Tbsp. toasted sesame seeds
- 2 Tbsp. roasted peanuts (lightly crushed, optional)
- 2 Tbsp. fresh cilantro leaves (minced, and fine stems)
