- 1 red onion (medium, coarsely chopped)
- 1 shallot (medium, coarsely chopped)
- 2 garlic cloves (medium)
- 2 Tbsp. red curry paste
- 1 Tbsp. curry (mild powder)
- 2 Tbsp. dark brown sugar
- 1 tsp. ground coriander
- 2 cans canned tomatoes (fire-roasted)
- 3 cups low sodium chicken broth
- 2 cups sweet potatoes (diced or sliced, Mine were quite small and thin, if using larger sweet potatoes, cut into bite size pieces.)
- 1/2 tsp. sea salt
- 14 oz. coconut milk
- 1 lb. large shrimp (shelled and deveined)
- 2 cups frozen peas (tiny)
- lime wedges (for garnish, optional)
- chopped fresh cilantro (coarsely, for garnish, optional)
- scallions (thinly sliced, for garnish, optional)
