- 1/4 cup Crystal Hot Sauce (plus 2 tablespoons)
- 1/4 cup worcestershire sauce (plus 2 tablespoons)
- 2 Tbsp. Creole seasoning
- 1 1/2 bay leaves
- 1/2 tsp. cayenne pepper
- 4 tomatoes (large, peeled, seeded, and chopped)
- 1 Tbsp. filé powder
- 2 lb. shrimp (peeled and deveined medium fresh)
- cooked rice
- green onion (Garnish: sliced, optional)
- 1/2 lb. shrimp shells (and heads)
- 1 gal. water
- 1/2 cup white wine
- 1/2 yellow onion (coarsely chopped)
- 1 stalk celery (coarsely chopped)
- 1/2 fennel bulb (small, coarsely chopped)
- 2 cloves garlic (smashed)
- 1 1/2 bay leaves
- 1/2 tsp. black peppercorns
- 1/2 tsp. dried thyme
- 1/2 lemon (Juice of)
