- 1/2 cup red pepper (finely chopped, 1/2 of a large pepper)
- 1/4 cup red onion (finely chopped)
- 1 jalapeño (seeded, membranes removed, and finely chopped)
- 2 Tbsp. fresh lime juice (1-2 limes)
- 1/4 cup chopped cilantro (or more to taste)

- 1 tsp. olive oil (or so, avocado oil, canola oil, etc.)
- 2 lb. large shrimp (21-25 per pound, tails removed, if needed, and chopped)
- 1 Tbsp. chili powder
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 heads butter lettuce (or Bibb, washed and leaves separated)
