Hub and I loved, and we are not “healthy eating” folks, although we try. I love cheesy, burritos and this was a quite satisfying substitute. We are putting this in our rotation. Yum!

It taste delicious. I thing is I forgot to put the lemon juice in the quinoa and I didn’t have any tomatoes but I had everything else and still tasted great!!

Really good flavors. It took more time than I thought it would so I’m glad I doubled the recipe. I would definitely recommend that. The leftovers were also delicious!

I loved this recipe, i didn't add lime juice because my mom can't have like and it still turned out delicious. very healthy definitely recommend

Delicious, we had it with Franks hot sauce and that was a nice addition that went really well with the shrimp.
