Description

With this Shrimp and Cauli Grits recipe, we’ve subbed out the grits with cauliflower rice, cutting back on both carbs and calories. Don’t worry, you’ll still feel that warm-the-belly southern charm. So call your pescatarian friend(s), your gym junkies, your southern bells, and good ‘ol boys to the table to share in this crowd pleasing, all walks appeasing dish.

  • 3 cups cauliflower rice
  • 15 shrimp (any variety)
  • 1 tablespoon smoked paprika
  • 1/2 tablespoon cayenne pepper
  • 2 garlic cloves
  • 2 scallions (the white parts)
  • 3 tablespoons cream cheese
  • 1/4 cup chicken stock
  • 1/2 cup cheddar cheese
  • 4 tablespoons butter

    Directions

    1. Put a medium pan on the stove over high heat. Add 2 tablespoons of butter to the pan, along with the cauliflower rice, and a splash of warm water.
    2. Place a large cast iron pan on the stove over high heat. Season your shrimp with smoked paprika, cayenne, salt, pepper and massage the seasonings into the shrimp. Place 2 tablespoons of butter into your large pan to coat the bottom. Once the butter is melted and the pan is screaming hot, add the shrimp. Spread them out, making sure that each shrimp is touching the surface of the pan.
    3. Add cream cheese to the cauli rice and let it melt down for a couple of minutes, giving it a few stirs along the way.

    Didn't use the immersion blender and it still turned out fantastic. Served with a side salad of arugula, spinich and grape tomatoes with spicy mustard citrus vinaigrette. Adding to my regular plan.

    This was amazing and me and husband worked on it together and I loved how quick it was. I added more cheddar to the grits and used a red onion instead for the shrimp.

    This was a very quick and simple reacipe. I even had all the ingredients at home. It was a bit too spicy for me, so I will cut the cayenne down next time. The grits were delicious.

    This could be the best thing I've ever cooked! I's a great recipe if you are on Keto (I am) and my friends (who are not Keto) all thought it was off the hook. I may have gone heavy on the cheddar cheese in the cauli-grits, next time I'll still go heavy on the cheese, but use Colby instead.

    This was so much fun to make. We opted to grate the cauliflower and once cooked used our Ninja blender to break it down to the consistency desired. Flavours were amazing and will definitely make often!

    Amazing! Very little cauliflower taste which made it even better. I will definitely make it again. I added 3 oz of cream cheese and 3 green onions. Texture was just like grits.
