- 1 lb. chicken sausage (Andouille pre-cooked, cut into 1/2 inch slices and halved)
- 2/3 cup all purpose flour
- 1 onion (large, peeled and diced into 1/4-inch dice)
- 2 bell peppers (large, diced in 1/4-inch dice)
- 4 cloves garlic
- 4 cups low sodium chicken broth
- 1 tsp. paprika (mild)
- 1/2 lb. carrots (peeled and sliced 1/4-inch thick)
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/2 tsp. thyme leaves
- 1 tsp. kosher salt (more to taste)
- 1/2 tsp. fresh ground black pepper (more to taste)
