- 1/4 cup water
- 2 Tbsp. hoisin sauce
- 1 1/2 Tbsp. fresh lime juice (plus more for drizzling on rice noodles)
- 3 tsp. soy sauce
- 2 tsp. brown sugar
- 1 1/2 tsp. chili garlic sauce (Asian)
- 1 garlic clove (small, minced)
- 1/4 tsp. sesame oil
- red pepper flakes (optional)
- peanuts (chopped, optional)
- 1 vermicelli rice noodles (bundle thin dried)
- 1 Tbsp. fresh lime juice (for drizzling on rice noodles)
- green leaf lettuce
- 1 handful bean sprouts
- 1 carrot (peeled and cut in to 2-inch matchsticks)
- 1/2 English cucumber (unpeeled and cut in to 2-inch matchsticks)
- 1/4 red cabbage (a small, thinly sliced in to 2 to 3-inch pieces)
- 1 green onion (green part only, sliced)
- chopped fresh herbs (Roughly, parsley, basil and/or cilantro)
- 8 large shrimp (6- ,cooked, cooled or at room temperature)
- peanuts (Additional chopped, for garnish, optional)
- lime wedges (for serving)
