- 1/4 cup extra virgin olive oil
- 1/2 cup yellow onion (finely chopped)
- 1/4 cup fresh basil (chopped)
- 1/2 tsp. fresh rosemary (finely chopped)
- 3 cloves garlic
- 6 oz. cooked shrimp
- 2/3 cup fresh breadcrumbs (made from French bread)
- 1/2 cup grated Parmesan cheese
- 1/4 cup mayonnaise (I used homemade, which was a little runny, so I used slightly less than 1/4 cup)
- 8 portobello mushrooms (2- to 2 1/2 inch, stems and dark gills removed with a spoon)

I used this as a base. I had a recipe for stuffed mushrooms but couldn’t find it so I started with this and added some proprietary spices and blends I have from Wildtree and it turned out delicious!!!
