  • 8 ounces shrimp (small raw, shelled and deveined)
  • 1/2 teaspoon kosher salt
  • freshly ground black pepper
  • 1/2 teaspoon cornstarch
  • 3 tablespoons oil (high smoke point, such as canola oil or rice bran oil)
  • 3 eggs (beaten)
  • 2 stalks green onion (minced)
  • 4 cups rice (leftover, grains separated well)
  • 3/4 cup frozen peas and carrots (defrosted)
  • 1 tablespoon soy sauce (use gluten-free soy sauce if you are making a gluten-free version, plus more to taste)
  • 1 teaspoon toasted sesame oil (dark)

    Very good…I have a wok and this is a super easy recipe and tastes just like takeout. I will make again. I used sweet onion instead of green onion. Would taste just as good using leftover chicken.

    This was pretty easy to make. Only needed 2 cups of dry rice. I will be making this agian.
    Fantastic recipe; with the exception of the recipe requiring too much rice (4 cups). The rice did not balance well with all other measured ingredients. I ended splitting the difference between a beef and shrimp mix and a bit extra all around on other ingredients and it turned out great. Will put this one on rotation with edits.

    Delicious! I used tamari sauce instead of soy and added bok choy. The recipe’s tips made a big difference, I think.
