- 1 onion (medium, chopped)
- 1/2 cup celery (diced)
- 1/2 cup bell peppers (diced, I used a combination of green bell pepper and red fresno peppers)
- 1 Tbsp. garlic (minced fresh)
- red chili flakes (to taste)
- 1 Tbsp. Cajun seasoning (Emeril's, to taste -see recipe below)
- 1/4 cup dry sherry
- 8 oz. tomato sauce (can of)
- 15 oz. diced tomatoes (can of)
- 1 cup chicken stock (or water and bullion equivalent)
- salt (to taste)
- black pepper (to taste)
- sugar (light sprinkle of, if your canned tomatoes are not sweet enough)
- sliced scallions (green)
- 1 Tbsp. cornstarch
- 1 Tbsp. water

Sautéed veggies in bacon drippings ( bacon drippings are even good on ice cream 😉 ) and Included diced mushrooms + gumbo file + black truffle salt as well as cilantro as an added garnish. I learned NO style cuisine from one of the Best Cooks in Dixie!

Delicious but fairly spicy for my kids… would suggest cutting Cajun in 1/2 and then see how you wish to spice from there

This is one of my favorite dinners to make, so I usually make a big batch so I can freeze some and have it again. I've tried a few different cheap white wines and it's always good. I add spinach and mushrooms as well.

Turned out well. Son had three portions and said it was bussin and daughter said it was really good. i added more creole seasoning and some old bay. Wish i made more.

It turned out really good! i didn't have the sherry wine, didn't miss it either. I also added a poblano pepper because it was in the fridge.... no onion used onion powder. Family loved it!

Very easy and authentic tasting. Used a premade creole spice I found in the spice isle. Substituted fresh tomatoes, and added a bit more tomato sauce. Family approved!

Tastes totally different than what I’ve had in a Cajun restaurant Spicier and more savory It tastes great, just not mild like I recall

It was easy to make. I used 2 lbs. of shrimp. I wish it would tell u how long to cook once everything is in the pan. for us non cooks. I also did 2 Tbls of water & 2 Tbls of cornstarch combo becuz the 1Tbls combo did not thicken the sauce for me.
