- 1/2 cup cream (whole milk, I used a splash of, plus 2%)
- 1 Tbsp. nam prik pao
- 1 Tbsp. curry powder (toasted)
- 1 tsp. salt
- 1 tsp. sugar
- 1/4 cup low sodium chicken stock
- 1 1/2 Tbsp. vegetable oil
- 1 1/2 Tbsp. oil (from the nam prik pao)
- 1 lb. crimini mushrooms (sliced)
- 3 cloves garlic (minced)
- 1 yellow onion (or medium white, sliced into 1/2-inch wedges)
- 1 lb. peeled shrimp (med-large, she calls for large, but I used medium as that is what I have on hand)
- 1 hot chile pepper
- 1/2 inch long green
- 1 cup celery leaves (packed, Chinese or American or 1 cup of peeled celery shreds)
