This recipe nailed the texture of shortbread, but personally the maple syrup (sugar free) ruined it for me (and most of my friends). It just over powered the wonderful flavor of shortbread. But super fun to make. I got to use my set of small cutters and I made mine look just like these. Very impressive. In the future I'm going to substitute Allulose liquid sweetener and vanilla for the maple syrup. I'm not sure yet of the amounts to convert, but will make sure there is the same liquid amount. I also like to press in a sprinkling of granulated sweetener on the top before baking.
