- 5 cups cod (Cape, Select frozen cranberries)
- 1 tsp. orange zest
- 1/2 cup granulated sugar
- 4 cloves garlic (very finely minced)
- 1/2 tsp. ground cumin
- 1/2 tsp. kosher salt (1/4 tsp table salt)
- 2 Tbsp. lime zest
- 12 oz. queso blanco (Queso Fresco, or Queso Campesino cheese)
- 1/2 cup all purpose flour

- 3 large eggs

- 16 oz. shishito peppers
- 10 poblano peppers
- 2 tsp. extra virgin olive oil
- vegetable oil (for frying the cheese - enough to come 1-2 inches up the side of a large skillet)
- 18 corn tortillas (plan on 3 per person)
- 1/2 green onions (optional)
- 1/2 cup chopped fresh cilantro (optional)
