- 2 cups crimini mushrooms (washed, dried, and roughly chopped, about ½-pound)
- 3 Tbsp. unsalted butter (divided)
- 3/4 cup brown onion (finely chopped yellow/)
- 2 tsp. minced garlic
- 1 cup vegetable stock
- 1/4 cup cream sherry
- 1/2 cup basil (lightly packed, roughly chopped, washed and dried)

Wow!! This is delicious!! I decided to use the 32 oz bag of riced cauliflower from Costco all at once and it worked out ok! I used 3 cups of mushrooms, 3 tablespoons of minced garlic and a whole medium yellow onion. I doubled the amount of stock and subbed Madeira wine as I didn’t have any cream sherry. I followed the recipe and it still took about 40 minutes. I had some truffle salt on hand and sprinkled it on at the end. It’s the cauliflower risotto of my dreams!!

Loved it ` needed to add more salt and I subbed aged goat cheese for the Parm. Also, as I didn't have cream sherry, just dry sherry, I added 2 teaspoons of brown sugar to the 1/4 cup cup it called for they sherry.
