Description

A little rose water gives this delicious version of rice pudding a delicate floral quality. It also lends the dessert Middle Eastern accents, along with sultanas (or golden raisins), pistachios, and the use of basmati rice (instead of other varieties). Look for rose water at specialty food shops and ethnic grocers, or from online sources. You can substitute pure vanilla extract in a pinch, but the outcome won't be the same.

  • 130 grams sultanas (soaked in warm water)
  • ground cinnamon

    1. Wash the rice well, dry it completely, and grind the grains coarsely.
