Description
No need to light a fire or risk getting sand from the beach in your dinner. This twist on a traditional seafood boil uses a sheet pan in the oven, making cooking and clean-up easy. The potatoes and corn get crispy on the outside, tender on the inside. And the seafood stays perfectly moist. This dish is perfect for a leisurely weekend dinner, but also simple enough for a decadent weeknight. Enjoy the recipe on its own or with rice or a loaf of crusty bread. Ingredients
- 1 lb. baby red potatoes (preferably no more than 1 inch wide)
- 3 ears corn on the cob
- 12 oz. kielbasa sausage (cooked beef kielbasa; or use cooked chicken sausage links)
- 3 cloves garlic
- 3 lobster tails (about 4 oz. each, preferably pre-split, thawed if frozen)
- 1/4 cup extra-virgin olive oil
- 1 Tbsp. Old Bay Seasoning
- 1 Tbsp. salted butter (melted)
- 1/4 tsp. black pepper
- 1 lb. large peeled and deveined raw shrimp (uncooked, 31 to 40 per lb., preferably with tails on)
- 2 lemons
- 3 Tbsp. chopped fresh parsley (optional)
Directions
- Preheat oven to 425°F. Line a sheet pan with parchment paper.
- Slice potatoes in half lengthwise. Shuck corn and cut each cob into 4 pieces. Slice sausages into 1 1/2-inch pieces. Mince garlic. Set ingredients aside.
- If the lobster tails haven’t already been split, prepare them by placing them with the hard, segmented shell side down on a work surface with the tails pointed away from you. Gently use your thumbs to press on and crack the 'ribs' in the center between the flippers (swimmerets), avoiding any thorny portions with your fingers. Turn the lobster tails over so the hard shells are on top, still with the tails pointed away from you. Using kitchen shears or other sturdy scissors, cut lengthwise through the center of each shell, starting at the body end (bottom) and stopping just before the tail fins (top). Don’t worry if the shells crack a little.
