- small onion (sliced)
- red bell pepper (sliced)
- 1 Tbsp. olive oil
- 1 tsp. Cajun seasoning (divided)
- 1 Tbsp. tomato paste
- 10 oz. cauliflower rice (each frozen)
- sea salt
- 3/4 shrimp (count per pound uncooked, peeled and deveined, with tails on)
- 1 Tbsp. melted butter
- fresh parsley (to garnish, optional)
- lemon (quartered)

Directions
- Preheat oven to 425°F.
- Add the sausage, onion and bell pepper to a large sheet pan. Drizzle with olive oil and 1 teaspoon Cajun seasoning; toss vegetables and sausage until well-coated.
- Bake for 10 minutes.
