Description
Make a batch of these filling, spicy breakfast burritos for a weekend brunch, then wrap and freeze the leftovers to enjoy throughout the week! The recipe is a Yummly original created by Sara Mellas.

- 1/4 cup cilantro (loosely packed)
- 1/2 red bell pepper
- 1/2 yellow bell pepper (or green)
- 1/4 red onion
- 8 oz. chorizo (removed from casing)
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 8 oz. frozen hash brown potatoes (thawed, about 1/2 bag)
- tsp. salt (for peppers and onions)
- black pepper (for peppers and onions)
- 6 large eggs
- 1 1/2 tsp. extra-virgin olive oil
- 1/2 tsp. salt (for eggs)
- black pepper (for eggs)
- 4 oz. mexican blend cheese (shredded, 4 oz. is about 1 cup)
- 6 large flour tortillas
- salsa (for serving, optional)
- sour cream (for serving, optional)

Directions
- Preheat oven to 350°F.
- Line a large baking sheet with parchment paper.
- Finely mince the cilantro and set aside. Finely dice the peppers and onion.

I replaced black beans for hash browns for less carbs. These were tasty!

While delicious, how does this qualify as a 'sheet pan' recipe?! You've already cooked everything on the stove, and all you're doing is warming/browning the burritos after they're assembled...

Super tasty. Was an easy supper. Added some beans and tomatoes, omitting the peppers and cilantro. A tad time consuming putting them together. Add 5 or so min to the baking time. Serve with guac, salsa, and a salad.

This recipe turned out amazing and I absolutely loved it. I would love to make it again for my family. I know my mum would like me to make it again.
