- 1 tsp. mustard powder (dried, such as S&B or Coleman’s)
- 1/2 tsp. chillies (powdered Guntur Sannam)
- 3 Tbsp. oil (mustard seed, or neutral oil such as canola or grapeseed)
- 1 tsp. kalonji seeds
- 1 large shallot (finely diced)
- 4 green chillies (–5 Indian, one finely chopped and the others left whole)
- 3/4 cup full fat coconut milk
- 1 1/2 Tbsp. oil (mustard seed, or ghee)
- 2 green chilies (Indian, split down the middle lengthwise)
- 3/4 tsp. mustard (Kandhamal Black)
- 1/2 tsp. kalonji seeds
- 1/2 tsp. chillies (powdered Guntur Sannam, optional)
