- 1/2 cup pineapple (1/4-inch slice)
- 1 tomatoes (julienne)
- 4 leaves collard greens (large chunks)
- 1/4 bunch bok choy (large chucks)
- 4 basil leaves (chiffonade)
- 1/4 cup oil
- 8 cloves garlic (sliced)
- 1/2 red onion (julienne)
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 3 Tbsp. honey
- 1 tsp. fish sauce
- 3 Tbsp. lime juice
- 3 Tbsp. mirin
- 1 Tbsp. sugar
- 1 Tbsp. salt
- 1 Tbsp. black pepper

Directions
- 1. Mix all ingredients for sauce and set aside
- 2. Season pork with dry rub and 4 tablespoons of sauce, let marinate for 2 hours
- 3. Heat a wok and add collards and sauté for 3 minutes, add pork and sauté additional 4 minutes. Add Remaining ingredients and garnish with tomatoes and basil.
