- 1/2 red pepper (chopped, plus extra for garnish, if desired)
- 3 Roma tomatoes (cored, seeded & chopped)
- 1 cup shredded sharp cheddar cheese
- 4 green onion stalks (snipped into small rings)
- 3 oz. black olives (half a 6-ounce can of, drained, rinsed & sliced)
