- 1/4 cup unsweetened shredded coconut (Try: NOW Foods Unsweetened Shredded Organic Coconut)
- 2 Tbsp. white sesame seeds (black and/or)
- 4 halibut fillets (boneless, skinless, about 1 lb)
- sea salt
- ground black pepper
- olive oil cooking spray
- 1 tsp. coconut oil
- 1/2 red onion (thinly sliced)
- 1/2 yellow bell pepper (each red and, seeded and thinly sliced)
- 2 cloves garlic (minced)
- 3 cups shiitake mushrooms (sliced)
- 8 oz. fettuccine (shirataki, shaped noodles, drained and rinsed)
- 1/4 cup low sodium vegetable broth
- 1/4 cup sherry (NOTE: You can omit the sherry if you prefer and use ½ cup broth total.)
- 4 tsp. tamari sauce (reduced-sodium)
- 1 Tbsp. fresh ginger (minced)
- 3 cups sugar snap peas (trimmed and cut in half)
- 1 tsp. fresh lemon juice
- 3 Tbsp. fresh cilantro
