- 2 turnips (medium, peeled and cut into chunks)
- 3 stalks celery (cut into thirds)
- 1 handful Italian parsley
- 1 handful dill
- 6 whole garlic cloves (peeled)
- 6 peppercorns
- 45 vegetables
- soup
- sofrito (this is what gives it its distinctive Latin flavor)
- 2 Tbsp. extra virgin olive oil
- 1 yellow onion (diced)
- 15 oz. diced tomatoes (drained)
- 1 red pepper (diced)
- 1 green pepper (diced)
- 2 Tbsp. fresh cilantro (chopped)
- 4 large garlic cloves (minced)
- 1 pinch saffron
- 1 tsp. hot pepper sauce (optional)
