- 2 1/4 cups water (1.5 cups for thin semiya)

- 1 bay leaf (small)
- 1/2 star anise (/ star flower)
- 1 mace (strand of, optional)
- 1/2 tsp. cumin (or shahi jeera)
- 1 inch cinnamon stick
- 4 cloves
- 2 green cardamoms
- 1 onions (medium, thinly sliced)
- 1 green chili
- 1 tsp. garlic paste (ginger)
- 1 cup veggies (mixed, carrots, gobhi, peas, beans)
- 10 mint leaves (/ pudina)
- 3 coriander leaves
- 1/2 tsp. Biryani Masala (powder, using more may turn biryani bitter)
- 1/4 tsp. red chili powder (optional)
