- 1/2 red bell peppers (chopped)
- 3 carrots (peeled, cut into 1-inch pieces on the diagonal)
- 0.5 oz. dried porcini mushrooms (rehydrated, see note)
- 2 cloves garlic (minced)
- 2 Tbsp. brandy
- 1 cup dry red wine (Rhone or Pinot Noir)
- 1 cup vegetable broth (more if needed)
- 1 Tbsp. tomato paste
- 2 tsp. fresh thyme
- 1 bay leaf
