- 1 tsp. ground cumin
- 2 cloves garlic (minced or pressed)
- 1/8 tsp. freshly ground black pepper
- 1 inch red onion (large, sliced in wedges)
- 1 bell pepper (large, seeded and sliced)
- 1 jalapeno pepper (seeded and diced, adds heat–reduce if necessary)
- 1 large tomato (chopped)
- 2 Tbsp. red wine vinegar
- 1 Tbsp. soy sauce (or coconut aminos)
- 1/4 cup parsley (minced)
