- 1/2 tsp. dried thyme
- 1/2 tsp. crushed red pepper flakes
- 1/2 tsp. onion powder
- 1/4 tsp. ground coriander
- 2 bay leaves
- 8 oz. seitan (package of, chunks, OR ~1-1.5 cups seitan, cut into chunks – make your own from scratch)
- 1/4 cup red wine
- 2 1/2 cups fresh sliced mushrooms
- 1 cup celery (chopped into big pieces)
- 2 cups carrots (chopped into big pieces)
- 1 cup Yukon Gold potatoes (chopped in big pieces)
- 3 cups water
- 1 1/2 tsp. red miso (OR 1 fake beef or vegetable bouillon cube)
- 1/4 cup all-purpose flour (+ ½ cup water)
- 1 Tbsp. reduced sodium soy sauce
