- 1 sweet potato (medium-large, about 14 to 16 oz/400 to 450 g, peeled and chopped into ½-inch cubes, 2 slightly heaping cups cubed)
- 5 Tbsp. coconut oil (or grass-fed clarified butter, melted and cooled slightly)
- 1 cup coconut sugar (Bob’s Red Mill Organic)
- 2 large eggs
- 1 1/2 tsp. pure vanilla extract
- 1/2 tsp. instant espresso powder (dissolved in 1 teaspoon hot water)
- 1/2 cup natural cocoa powder (unsweetened)
- 1/2 cup flaxseed meal (Bob’s Red Mill Organic Golden)
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 3 Tbsp. semisweet chocolate chips (for the top, optional; use stevia-sweetened chocolate chips to keep them paleo)
