  • 1/8 cup egg whites (prepared, I use Trader Joe's Cage Free Egg Whites)
  • 1/8 cup unsweetened almond milk (I use Trader Joe's brand...are you starting to see a trend?)
  • 1 tablespoon fat free ricotta cheese (wanna guess? yep, I use TJ brand)
  • non stick spray (• Smart Balance)
  • 1 tablespoon crumbled bacon (or 1 crispy cooked slice bacon crumbled - ADD 1 Smart Point, 1PPV!, optional)
  • 2 slices bread (high fiber low point, like Healthy Life Flaxseed - ADD 2 Smart Points, 2PPV!, optional)
  • 2 teaspoons light mayo (Smart Balance, ADD 1 Smart Point, 1PPV!, optional)
  • 1 egg (my many, Mug Recipes like, just be sure you adjust points plus accordingly:)
