- 1 Tbsp. fresh lime juice

- 2 tsp. ginger (freshly grated)
- 1/4 tsp. crushed red pepper
- 2 lb. sea scallops (U15, rinsed, muscle tabs removed and patted dry)
- 1 Tbsp. brown sugar
- 1 Tbsp. smoked sweet Spanish paprika
- 1 Tbsp. ancho chili powder
- 1 tsp. ground white pepper (freshly)
- 1 tsp. freshly ground black pepper
- 1/2 tsp. dried thyme
- 1/2 tsp. dried oregano
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder

- lettuce leaves (Fresh green leafy, like baby romaine or Boston)
- green onion (For garnish: thinly sliced, and fresno peppers, chopped cashews, cilantro and squeeze of lime, optional)
