- frozen salmon
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1/4 cup brown sugar (Dark preferred, but light ok)
- 1 tsp. freshly grated ginger
- 2 tsp. finely chopped garlic (or, 1–2 Medium cloves freshly grated)
- 8 rice paper (rounds, or Spring Roll skins)
- 1 bunch chives (or 3 Green onions, light green area to the top of stems, cut into roughly 1 1/2″ pieces)
- 2 Tbsp. seasoned rice vinegar
- 2 Tbsp. vegetable (Canola or Grapeseed Oil, more as needed, divided)
