Ingredients

- 700 grams potatoes (cut into 2 cm pieces)
- salt
- 700 grams fish (thick, such as Monkfish)
- 2 Tbsp. olive oil
- 130 grams spinach
- 1 cup tomatoes (either diced or use cherry or a few sun dried)
- 20 olives (either colour - pitted)
- balsamic vinegar

Directions
- Cook potatoes till tender
- Coat fish in oil, sprinkle with salt and pepper
- Cook fish quickly until golden brown on both sides. Leave slightly under done as it will continue to cook while standing
