- 100 grams sweet potato (peeled and grated)
- 100 grams carrot (grated)
- 3 spring onions (green part only, finely chopped)
- 50 grams shallots (red Asian, finely chopped)
- 1 egg yolk
- 1 tsp. chicken bouillon powder
- 1 tsp. salt
- 1 tsp. ground white pepper (freshly)
- 2 tsp. caster sugar
- 30 prawns (green, cleaned and peeled with tails in tact)
