- 1 lb. shrimp (without their shells, headless, de-veined, We like Gulf Shrimp, Red Argentinian, or any wild caught. If you have shrimp in the shells, remove the shells and boil them down with 5 cups of water till you have 2 cups, and use that intense broth for this meal.)
- 12 oz. mussel meat (already cooked)
- 12 oz. meat (clam, already cooked)
- 1 lb. squid (cleaned and cut into two inch pieces)
- 8 to 12 ounces sausage, cut into bite size pieces (pork, chicken or turkey) (cut into bite size pieces, pork, chicken or turkey)
- 1 lb. capellini (Angel Hair pasta)
- 1 pinch saffron (lightly pan heated and then crushed into a powder that is at least 1/2 teaspoon)
- 2 Tbsp. mirin (or 2 teaspoons sugar)
- 1 Tbsp. anchovy paste (or 3 tablespoons fish sauce, we use Red Boat)
- 2 shallots (large, finely chopped)
- 4 tomatoes (large, with thick flesh, like dry farmed Early Girl, or 8 Campari hot house tomatoes)
- 2 stalks lemongrass (bruised with mortar, cut into 2 inch pieces)
- 8 Thai basil (entire stalks, or regular basil)
- 2 cups broth (reduced shrimp, or 2 cups clam juice)
- 5 cloves garlic (crushed)
- 12 oz. white wine (we like Chardonnay for this meal)
- 1 tsp. salt
- 1 tsp. black pepper
- 1 1/2 inches fresh ginger (grated)
- 3 limes (juicy, depending on size, squeezed)
- 1 cup chopped cilantro (tightly packed)
- 8 kaffir lime leaves (cut into strips to release flavors)
- 2 Tbsp. coconut oil (1 for sausages, 1 for the garlic and ginger)
- 12 oz. coconut cream (better than coconut milk or “lite”, which is just the cream with water added)
- 1 Tbsp. Sriracha chili sauce (if you like it spicy)
- salt
- pepper
- 4 inches cinnamon stick (broken into 1 inch sections)
- 2 Tbsp. cumin (ground)
- 6 green cardamom (ground)
- 4 cloves (ground)
- 3 star anise (ground)
- 2 tsp. coriander (ground)
