- 6 chinese chives (or flowering garlic chives or 3 scallions, finely sliced)
- 4 hot water (dried Chinese, shiitake mushrooms, soaked in, and finely diced)
- 36 squares wonton wrappers
- 2 large carrots (thinly sliced on a sharp bias)
- 1 Tbsp. fresh cilantro leaves (chopped)
- 3 Tbsp. toasted sesame oil
- 3 Tbsp. light soy sauce
- 3 Tbsp. rice vinegar
- 1 red chile (small, stemmed, seeded and very finely diced)
