- 5 cups fish stock (bottled clam juice or chicken broth)
- 3 bay leaves
- 2 1/2 Tbsp. Creole seasoning (recipe below)
- 1/2 lb. andouille sausage (or preferred spicy sausage, sliced into 1-inch pieces)
- 1 lb. large shrimp (shelled and deveined)
- 1 cup crabmeat (picked over for bits of shells)
- 2 1/2 Tbsp. paprika
- 2 Tbsp. salt
- 2 Tbsp. garlic powder
- 1 ground black pepper (tablesspoon)
- 1 Tbsp. dried minced onion
- 1/2 Tbsp. cayenne
- 1/2 Tbsp. chipotle powder (ground)
- 1 Tbsp. dried oregano

It was excellent I make my own seafood stock as the base and mix and match what ever protein I have. I did make one change in the execution of the recipe. Instead of cooking the peppers and onions into the roux, I cooked all of my vegetables first and put them in a bowl and then made the roux and then added everything back into the pot. I just did not think the roux formed as well with the vegetables in it. But the end result was excellent and fairly easy and not overly time consuming.
