- 8 oz. calamari (raw, can buy frozen and defrost if you can’t find fresh)
- 2 chorizo (links)
- 2 yellow onions (medium)
- 2 plum tomatoes
- 8 oz. peas
- 2 bunches parsley
- 4 cloves garlic
- 1 1/2 cups arborio rice (its important to use this type of rice)
- 1/2 tsp. saffron (a little goes a long way, make sure its real saffron threads)
- 4 chicken stock (concentrates OR 4 cups of ready-made chicken stock)
- 2 tsp. smoked paprika (NOT regular paprika, there is a big difference, trust me)
- 2 Tbsp. olive oil
