- 3 large eggs (lightly beaten)
- 1 Tbsp. extra-virgin olive oil
- 1 Tbsp. butter
- 1 cup onion (diced)
- 1 cup celery (plus the leaves from the stalks, diced)
- 1 tsp. kosher salt
- 16 oz. scrapple (Jones Dairy Farm, broken up with your hands)
- 2 Tbsp. garlic (minced)
- 3 Tbsp. fresh sage (finely chopped)
- 3 Tbsp. fresh rosemary (finely chopped)
- 1 qt. chicken stock (divided)
- 10 cups cornbread (stale, cubed)
- 3/4 cup walnuts (chopped)
- 1 Granny Smith apple (peeled, cored and diced)
- 1/2 cup dried cranberries
