Ingredients

- 1 Tbsp. olive oil
- 1 onion (medium, chopped)
- 2 cloves garlic (minced)
- 1 red bell pepper (diced)
- 1 lb. firm tofu (drained)
- 1/4 cup nutritional yeast
- 1/2 lemon
- 1 carrot (peeled and finely grated)
- 1 bunch spinach (washed)
- 2 tsp. cumin
- 1 tsp. thyme
- 1 tsp. paprika
- 1/2 tsp. turmeric
- 1 tsp. sea salt

Directions
- Chop the onion, pepper and garlic and add to heated oil in a large frying pan. Saute until translucent, then add the salt and spices.
- Drain the tofu and add to the spiced veggies. Break it into chunks with a wooden spoon.
- Add the carrot, and nutritional yeast and stir.
- Splash in the lemon juice and add the spinach. Stir until the spinach is wilted and serve hot!
