    loved it! i used regular spinach and cooked it before i mixed with the eggs. and i used blue cheese instead of white cheddar.

    Amazing! Tasty, cheesy and fresh eggs with a nice touch of colour. I also cooked Chorizo and Mushroom as a side dish, but ended up combining it all together. Being in Colombia, I served it up over the top of an Arepa accompanied by a Black Nespresso Coffee.
