Description
Hailing from the highlands, these scotch eggs are a decadent treat. Featuring a hardboiled egg at the center, a layer of sausage meat surrounds the egg and is then rolled in a herbed breadcrumbs and egg mixture before being fried to a golden crisp. Sprinkle some grated cheese on before serving for additional melty flavor. These eggs make a fun addition to breakfast or brunch but can also be a feature on your dinner table.

- 4 eggs (medium, or 8 quail eggs)
- 400 grams sausage meat (fresh, pork or chicken)
- 1 tsp. fresh thyme
- 1 Tbsp. fresh parsley (chopped)
- 1 spring onion (finely chopped)
- salt
- ground black pepper
- flour (for coating)
- 1 beaten egg
- 200 grams breadcrumbs
- vegetable oil (for frying)

Directions
- Place the eggs in a saucepan, cover with cold, salted water and bring to a boil. Reduce the heat and simmer for 9 minutes. Drain, cool down with cold water, and peel. Set aside.
- Mix the meat with the herbs, black pepper, and onion. Add salt to taste.
- Divide the meat into 4 portions, or 8 if using quail eggs.
