- 2 carrots (cut into big chunks)
- parsley sprigs (flat-leaf, to garnish, optional)
- 100 grams butter (plus extra for the tray and paper)
- 2 tsp. juniper berries
- 3 onions (medium, chopped)
- 2 garlic cloves (finely chopped)
- 1 celery stick (finely chopped)
- 225 grams breadcrumbs (fresh white)
- 2 apples (eating, peeled, cored and finely chopped)
- 225 grams prunes (soft pitted, chopped)
- 25 grams parsley (pack, chopped)
- 2 eggs (beaten)
- 300 mL red wine
- 1 Tbsp. jam (lingonberry, or redcurrant jelly)
- 600 mL turkey stock
- 25 grams butter
- 50 grams almonds (whole)
- 2 apples (eating, cored and each cut into 8 wedges)
